Sweet Potato Sunday Afternoon......

Sweet Potato Cinnamon Buns

For the dough…

2 1/4 tsp of yeast

1/2 cup of warm water
1 egg
1 tsp vanilla bean paste
3/4 cup sweet potato puree
1/4 cup sugar
1/2 tsp salt
1/2 tsp cinnamon
1/8 tsp nutmeg
3 cups all purpose flour

Knead it together for about 10 min… You can double this recipe too, I usually do...

Let it rise until double… for about 45 min…

make the filling…
1/2 cup butter, softened
1/2 cup sugar
1 tsp honey
2 tsp cinnamon
1 tsp vanilla bean paste

Roll out the dough in a rectangle about 1/4 inch thick and spread the filling on top… roll into a log… and cut into slices ...

Let rise until double (about 45 min- and hour) and preheat oven to 350…

bake for about 25 min......

Add the frosting while they are still in the pan and slightly warm…

For the frosting:
1/4 cup butter, softened
4 ounces cream cheese, softened (half of a package)
1 tsp vanilla
1 dash cinnamon
1 cup powdered sugar, sifted

Sometimes I don't get a chance to ice them....doesn't seem to stop anyone from eating them!!!

Feel free to copy and paste the recipe, I found it somewhere only it was a pumpkin cinnamon bun, sorry I can't remember the original recipe was from....maybe someone knows?

Add a cup of vanilla bean coffee in your favourite mug and enjoy.........

Oh yes, I forgot to say...the sweet potato replaces the fat in the recipe so go ahead and have two!!!!!

Today must be the day of cinnamon rolls made different ways. I was watching them make some this morning using applesauce, honey, and whole wheat flour that they baked in a muffin pan. They sounded good and yours looks so yummy. It makes you want to have one or two with a cup of hot tea, coffee, or maybe hot chocolate. Take your choice. Have a great day my friend. Take care. Margaret dear,

I LOVE SWEET POTATO ANYTHING! In fact, I bought a FOOTBALL-sized one yesterday, made it in the microwave and DEVOURED immediately. It is like eating a piece of cake with not as many calories, but tons of vitamin A to boot! I made a sweet potato bread once for Thanksgiving and it was unbelievable. THESE BUNS LOOKK WONDERFUL!!!! Enjoy your week dearest! Anita

I love all things made with sweet potatoes:
Sweet potato bisquits, sweet potato pie, sweet potato butter...

I am a horrid cook so I stock up on these southern mainstays when ever I am deployed for a disaster in the south and sometimes my friends mail me a package to help me make it through a stressful week.

Thanks for the recipe.
